I used to work in a Michelin star restaurant in New York and it was a very busy place and we had a lot of regulars and VIPs coming in. We had a sous chef that was in charge of ordering and receiving and he would always let the walk ins expire just to save money and we were serving lobster bisque to a table of 10 and ran out of the good bisque so he knowingly served them expired soup and I was against it and brought it up to him and he said “don’t worry about it, they won’t notice and they’ll be out of here in an hour, we’ll make a new batch for tomorrow” and we ended up serving it to them with no complaints or anything and that was the only time he did something like that but the orders from the suppliers were always scaled back to save money on cost.<br><br>Edit: Thanks guys, I feel much better now. I moved to Chicago and work for a new restaurant now and the kitchen is run much, much better and orders are always fresh.
