Use a pancake recipe as the batter for homemade onion rings

Mix up your favorite pancake mix, add some milk to thin it out a bit. Slice an onion into a few big rings, cut out the center ring so that the batter has more room to coat the onion. Dip the onion rings in the batter and fry in a pan with some oil. Season with salt and chili powder or whatever you like. They taste amazing and are way easier to make than a lot of the recipes I've seen for onion rings.<br><br>Edit: I use this method to make pickle ring and to coat some of my homemade chicken nuggets. You can also use capers, green beans, green peas, asparagus, or mushrooms in place of the onions for a tasty side dish.
