[Recipe] Fried rice

For 2-3 servings<br><br>320g of leftover rice<br><br>1 tbsp vegetable oil<br><br>1 medium onion diced<br><br>2 cloves of garlic minced<br><br>1 tsp grated ginger<br><br>250g of frozen mixed vegetables<br><br>4 eggs<br><br>1 tsp ground cumin<br><br>Salt and black pepper<br><br>2 tbsp of soy sauce<br><br>Chopped spring onions for garnish<br><br>Heat the oil in a pan over medium heat, add the onion, garlic and ginger. Cook for about 5 minutes stirring frequently until lightly browned.<br><br>Add the mixed vegetables and cook until they are no longer frozen.<br><br>Crack in the eggs and scramble them into the mixture until they are fully cooked, breaking them into small pieces as you go.<br><br>Add the cumin, salt and pepper, stir well.<br><br>Add the rice to the pan breaking up any clumps as you go. Stir well to combine with the rest of the ingredients.<br><br>Add the soy sauce, stir well again, cook for a further couple of minutes.<br><br>Turn out into a bowl and garnish with chopped spring onions.<br><br>Serve.
