After using up all my winter tomatoes I had so much juice I could make a big pot of tomato soup. I used 5 cups of tomato juice, 2 cups of vegetable broth, one cup of milk, a tablespoon of olive oil, a teaspoon of basil, and a teaspoon of garlic powder. After the soup was done I added a cup of shredded mozzarella cheese. This made me 6 quarts of tomato soup which I bagged them up and froze for future meals. This cost me a total of $4.50 to make. This comes out to .75 per serving.
