What's your favorite recipe that was born out of a mistake?

A staple recipe in my house is a chicken and rice dish my wife and I accidentally invented almost 10 years ago. <br><br>The mistake was simple - I tried to mix a chicken and rice casserole into the rice cooker instead of the oven. <br>It was one of those, "let's see what this button does" moments with a rice cooker, and as we all know I was extremely lucky with how it turned out.<br><br>The best part about this dish is that it was a combination of leftover ingredients I had from previous meals, so everything you need can easily be substituted based on what you have on hand. You can also easily split it into two portions if you like.<br><br>Ingredients:<br><br>1-2 lbs boneless chicken breast, thighs, and/or wings. Or a combination of all <br>1 cup rice (white or brown, whatever you prefer) <br>1 cup of cream of chicken soup <br>1 can of chicken broth <br>1 can of water <br>2 tbsp of butter <br>1 tsp paprika <br>1 tsp chicken seasoning <br>1 tsp garlic powder <br>Salt and pepper to taste <br>2 cups of frozen mixed vegetables (peas and carrots, corn, etc) <br><br>Instructions: <br><br>Place butter at the bottom of the rice cooker, top with rice. <br>In a separate bowl mix together the chicken broth, water, cream of chicken soup, paprika, garlic powder, chicken seasoning, salt and pepper, then pour into the rice cooker. <br><br>Place the frozen veggies on top, and then add your chicken. <br><br>Cook until the chicken is white, the rice is tender, and the veggies are soft. <br>Stir the portion of rice, down to the chicken broth and soup, and cook until the liquid is absorbed and the rice is extremely tender. <br><br>You'll know the chicken is cooked through when you can easily pull the meat apart with a fork. <br>Top it off with your favorite seasonings and enjoy!<br><br>This recipe has been a crowd pleaser since the day we made it, and we still cook it multiple times every month.
