How do you get soft cookies without using butter?

I’ve been making cookies with oil instead of butter. On the rare occasion they’re soft, but most of the time they’re a bit crispy on the outside and hard on the inside. I’m not the most consistent baker, so it’s probably an issue with the recipe or so on, but I’d like to know how to do it that way.
