What do you do with leftover white rice?

I can never get a batch of white rice to be gone, and I can't finish an entire batch alone. I end up throwing it out if I don't get around to it (I always forget if I have rice in the fridge when making food and I don't want to eat rice if I'm not in the mood for it). I've made a couple fried rice dishes out of them and sitting there with a bowl of rice and egg and scrambling it is boring to do. I also freeze if for fried rice but I've made plenty of fried rice dishes from fresh rice.

Currently I'm fermenting some rice into sake but doing that from scratch is a joke. I'm spending a whole Saturday making sake and I'm having to deal with a lot of issues with sitting there cleaning. I can't get commercial quality sake out of it. Next time I'm going to buy sake from a store because I don't think I'm getting around to preparing rice in the sake kettle for an hour. The rice is currently sitting there in the sake kettle.
