Is it legal to fight a police officer?

It is my understanding that police are trained to make sure deadly force stops a threat entirely and will not stop until said threat is neutralized. The thought of that makes me nervous because I’m worried that I could get in trouble even if I defend myself from an officer, even though they’d end up killing me if they wanted me dead. So is it acceptable to fight back or not?
