I've done this at multiple places and have had a job offer thrown in my face.

This is my most recent exit interview.

Me: I have an interview with [large tech company] on X date

Employer: How much do they pay?

Me: They are offering 40% more, a $10k signing bonus, and 50% more vacation.

Employer: I need a couple of days to see what I can do.

Me: You have until X date.

Me: [a couple of days later] Hey there. I just wanted to see what you were thinking.

Employer: I don't think that I can match the offer. I am going to see what I can do about stock.

Me: I appreciate it. I will talk to you tomorrow.

Me: [next day] I think I am just going to leave.

Employer: I just need a couple of days to talk with the board.

Me: [two days later] I got the job. I am leaving.

Employer: What did they end up offering?

Me: What they originally offered. But I can match the original offer if I stay.

Me: Why didn't you just match the original offer the first day?
