What would you do with a meal prep business if you sold it?

I'm getting a weird opportunity where some guy in the area wants to sell his meal prep business and he's looking for somebody to buy it because he needs to open another restaurant. My gut is telling me to take this chance but I don't even know where to start. I'm just a guy whose done a lot of cooking in his life. I don't know anything about running a business. Any thoughts from the meal prep community?
