My 40th birthday is in a few days, and I am going to "Europe" for 82 days. How can I document my trip with a single photo a day?

I am going to be in "Europe" for a while (starting in Lyon France, making my way to Italy, Spain, Portugal, Ireland, and finishing in London). I'd like to know the following:<br>- Is there a specific way to document the trip?<br>- Which application do you think I should use?<br>- On the days I am not sightseeing, how do you think I can document?<br>- Do you have any tips for staying organized?<br>- Do you recommend any specific gear?<br>- Any tips on making it a unique daily photo?<br><br>I've seen a lot of these photo a day posts, but most are using their iPhone and I have a variety of devices (SLR, iPhone, GoPro etc).
