This was 5 lbs of chicken thighs, cooked with salt and pepper.

Then I made 5 lbs of rice, and froze it in 50 separate little bags. (I prefer making this bulk because it keeps longer.)

Then I steamed 5 lbs of broccoli, and froze it in 50 separate little bags.

Then I mixed it all together, 1 bag chicken, 1 bag rice, 1 bag broccoli, and froze it all.

These will make great lunches at work, and are healthy to boot!

EDIT 2: Wow, this kinda blew up. I appreciate all the kind words, everyone. I do these kinds of things often. I used to go from $400-600 a month in groceries, down to $60-80, and I had leftover money for spending. I make large batches of meatballs, chicken breasts, rice, pasta sauce, chicken stock, everything. I did this as a way to save money, and teach myself new skills.

Also as an aside, if you ever find yourself in a tough spot, apply for SNAP. It’s an underutilized resource that can get you back on your feet.

EDIT:

Cost Breakdown:

1 (5lb) bag of chicken thighs $8.

1 (5lb) bag of rice $10.

2 (2.5lb) bags of frozen broccoli $17.

Total cost is $35.
