How do I keep my chicken from drying out?

Thanks in advance for any advice y'all. <br><br>I'm a meal prep beginner. I meal prep 5 days at a time (mon-fri) and typically I prep the following- chicken and a carb. (rice and disposal utensils) <br><br>My chicken is just about always dried out. I marinate it the day before and cook it the next day. I cook it in a skillet on the stove in a little bit of olive oil. I never let the skillet get super hot. Usually lets it cook 8-10 minutes a side, and then let is sit for a few minutes. <br><br>I feel like my method is sound... but every time I open a container and eat the chicken is JUST so dry. <br><br>I feel like the chicken is still good but I don't like dry chicken. <br><br>Any advice would be greatly appreciated.
