I used to poach this sub for recipes all the time when I was a poor college student who was clueless in the kitchen. It inspired me to learn how to cook and to try new things and to not be afraid to fail because a cheap meal wasn’t the end of the world if it tasted bad.<br><br>I just made this delicious meal for my family and when I was finishing up I realized it was an old recipe from this sub I had found. I thought it was so cool how I’d been able to follow the recipe and make something delicious when I was alone, and how I could now make the same recipe for my husband and our young kids. <br><br>It just made me reflect on how much I’ve learned and grown and how positive my experiences on this sub has been so I wanted to share that with you all :) <br><br>This sub is proof that even though food is expensive, there are plenty of options for a meal that is healthy and delicious and easy on the wallet. At least for us, we spend less now than we did when we only had 2 mouths to feed and were constantly eating out.<br><br>I hope y’all are doing well and I’m so glad I’m not the only one that loves to cook!<br><br>Edit: okay wow, I am so grateful for the kindness all of you have shown. I almost deleted this post because I thought it was too sappy lol. Thank you so much for the awards, I feel very humbled. <br><br>I also want to say thank you to those of you that have shared your own experiences of how they’re cooking for their children now after being inspired by this sub (and other subs) when they were students. You all have made my day :) <br><br>I also want to say to those who have shared about food insecurity, I’m so sorry. I have been there and it absolutely fucking sucks. There are a lot of resources for help in the United States and other countries so I encourage you all to do that research. <br><br>My husband and I have been more fortunate than I ever thought we’d be at my age, so we have been donating to our local food bank every month for the past year. It’s not much, but I would ask you all to consider donating to your local food banks or even volunteering because so many people depend on that.<br><br>I hope that all of you have a great rest of your day :)
