How does a microwave work?

I saw a thread on this sub that asked a question about microwaves which got me thinking...how do they work? Why do they only heat up water? I saw a video on YouTube that had a guy put a hot dog in a microwave and left it in there for like 20 minutes or so and it just started steaming and never caught fire or anything.
