I'm a fan of rice and beans. I feel like I'm getting enough protein, carbs, and fiber. I buy my rice in bulk (5 lbs. bag) and my beans (7 lbs bag) My cost is around $6/lbs for beans (they are organic) and rice. I cook for 1 so I feel like 5 lbs. is a lot for me but I can do 3 meals a week for the next 4-5 weeks. I pick a different recipe and make it 3 times for the week and I'm done with prep for the week. I get 5 lbs. of rice at a time so I don't have to buy it as often so I'm only buying rice every other time when I have to buy beans.

I add other vegetables like salsa, Tomatoes, frozen carrots, onions, garlic powder, frozen peas. You can use a lot of different vegetables. I also add a little bit of mozzarella shredded cheese for a little melted cheese. I also use cheese to make smoked rice and cheese burgers on bread it's an interesting taste but it's tasty. It's not the healthiest, but it's super cheap and can be made in large quantities. If I'm feeling extra hungry I can add a little bit of chicken breast, some turkey bacon, or some eggs.

I'm also a big fan of sweet potato. I can buy a 5 lbs bag and pay around 2.50 which again works out really cheap. It's a good source of fiber, protein, and carbs. It's also very filling but I end up eating a lot of it. I can't get enough of it. I like to bake it and when I'm in a hurry I can make a potato cake on the stove and it tastes like pan fries. I also add vegetables like salsa, shredded cheese, sour cream, and Greek yogurt. It's really good my favorite way to eat it is with some cheese and salsa.
