What are some cheap *meals* that are also healthy?

There are a lot of recipes posted and ideas shared here about cheap foods that are not healthy---like beans and rice, pasta with butter, and grilled cheese. I understand that sometimes people just want to get by, but what I'm hoping for are ideas for cheap meals that are also healthy. As people who love cooking, I figure we have a lot to add to this discussion. What are some healthy meals you like that are also very cheap?<br><br>I'll start with one of my favorite cheap/healthy meals: <br><br>Three bean soup:<br><br>Ingredients: <br><br>- 2 cups dried black beans <br>- 1 cup dried pinto beans<br>- 1 cup dried kidney beans<br>- 4 carrots <br>- 1 bag of frozen corn <br>- 3 sweet potatoes <br>- 4 cups chicken broth <br><br>Instructions: <br><br>- Boil the dried beans in 4 cups water, then drain. <br>- Chop the carrots and add to the pot. Boil the carrots in water until they're mostly done (about 20 minutes), then drain. <br>- Chop the sweet potatoes and add to the pot. Boil the sweet potatoes in water until they're mostly done (about 20 minutes), then drain. <br>- Add the cooked beans, the frozen corn, and the chicken broth to the pot. <br>- Boil the mixture for about 10 minutes, or until the vegetables are tender. <br>- Serve and enjoy! <br><br>Prep time: 10 minutes<br>Cook time: 50 minutes<br>Cost: $5.30<br>Servings: 8<br><br>This is a healthy meal that's very filling, and it's dirt cheap.
