How do you cook 100 lbs of potatoes?

I'm a cook at a hospital and I just started working in the kitchen. I'm still a student so I'm mostly working at night doing prep stuff for the next day's meals (nothing super involved). I get to work, check the fridge, check the menu for tomorrow, open fridge, check the menu for tomorrow, open fridge and check the menu for tomorrow etc. I'm trying to get a good habit of just being familiar with what's in the kitchen. Anyway, the one fridge has been empty for a couple weeks and all I see in there are bag after bag after bag of potatoes (I think 5 lbs each) and I did some math and the way they're stocked in should be around 100 lbs of potatoes. How the fuck do you use up 100 lbs of potatoes? We only do breakfast and lunch, no dinner, but holy shit. What would you make with 100 lbs of potatoes?
