You guys inspire me to cook healthy, but what do I do with the leftovers?

Hi. I get inspired every time I look at this sub. You guys are amazing. I cook fairly often, mostly two meals a day because I'm already starting to feel guilty after lunch. But I'm a terrible cook, and I don't know what to do with the leftovers. For the last 3 days, I have reheat and reheated the same dish, and now it's a solidified mess.<br><br>What do you guys do with the leftovers? I've read about "meal prep" and how you guys reheat and eat a week's worth of food. But this food is so terrible. Is there a way to make it last without going bad/moldy? Also, I don't have a microwave, and a toaster oven takes forever.<br><br>EDIT: Thank you everybody for your advice! I'll try to make smaller portions and cooking different things each time. I'll also see if I can get a microwave. Try some new dishes and recipes. Also, freezing. I'll definitely try my hand at freezing. Try some new dishes and recipes.
