Meal Prep Recipe: Pumpkin Cream Pasta Bake

I made this for a meal prep last year and it was super delicious with a nice fall twist. All the ingredients are relatively cheap and easily found. For 6 meal prep containers you need:<br><br>4 cups of pasta<br>1 cup of pumpkin puree<br>1 cup of canned cream<br>1/2 cup of milk<br>1/4 cup of butter<br>1/2 cup of shredded mozzarella cheese<br>500g of sausage<br>500g of tomato<br>1/4 cup of olive oil<br>1/4 cup of chopped coriander<br>2 teaspoon of salt<br>2 teaspoon of sugar<br>1 teaspoon of paprika<br>1 teaspoon of oregano<br>1/2 teaspoon of basil<br>1/2 teaspoon of thyme<br>1/4 cup of black pepper<br><br>1. Preheat the oven to 180°C.<br>2. Chop the tomato and sausage into bits.<br>3. Heat the olive oil in a pan and fry the tomato, sausage, coriander, paprika, salt, sugar, oregano, basil, thyme and black pepper until the tomato is soft.<br>4. In a different pan, melt the butter and pour in the pumpkin puree, cream, milk, salt and black pepper. Stir until it's smooth and get any lumps out.<br>5. Boil the pasta until it's done, then mix it with the pumpkin cream.<br>6. Mix the tomato and sausage mixture with the pasta and spread it evenly in multiple oven dishes.<br>7. Top with shredded mozzarella cheese and bake for 15-20 minutes, or until the cheese is melted and golden brown.<br>8. Let it cool down completely, then put it in a meal prep container and refrigerate until you can eat it.<br><br>I recommend putting the dish in the microwave for 1-2 minutes to heat it up a bit after refrigeration. Tastes very good with a green salad and a light vinaigrette!<br><br>Let me know if you want to see more of this content!
