I like food. I like cheap food. And I'm also a lazy bastard who's quickly losing weight due to the diagnosis of an incurable disease. I'm quite fat and I've been told that if I don't start losing weight... well. It'll be sooner than later. <br><br>I'm always on the lookout for cheap food. I usually go with rice. But today I found my holy grail. <br><br>I recently learned that dried beans are cheap and nutritious, filling, and pretty good for you. But cooking them takes forever. I've been experimenting with all the different kinds and lentils. I found that mung beans, while not the cheapest, are not too bad in price and relatively easy to cook. <br><br>I just bought a 2 pound bag of mung beans for $3.50. Then I looked at the nutrition facts. REAL nutrition facts. Not that fake stuff where you have to multiply everything by 3 because "serving size" is 1/4 cup. This bag listed nutrition facts for 1 cup. <br><br>I boiled 1 cup of mung beans. No added salt. No nothing. 1 cup of water. <br><br>I was not expecting the 1 cup of mung beans to expand to 3 cups, but it did. I was a little impressed. I took a bite and I really loved it. They tasted pretty good for not salting them, sort of like chickpeas but not as creamy. Then I looked at the nutrition facts. <br><br>1 cup of mung beans, when cooked, is perfectly filling. It's like the hunger suddenly disappears and you feel full. While I was still curious as to how filling 3 cups was going to be, I was also very happy with 1 cup. I looked at the nutritional facts. I asked myself "what the hell am I eating?". <br><br>1 cup of mung beans, cooked, is 212 calories. It also has 15g of protein. 62% of my daily fiber needs. 50% of my daily folate needs. 40% of my daily iron needs. 40% of my daily magnesium. 60% of my daily potassium. 20% of my daily zinc. <br><br>It also has a shit ton of other vitamins and minerals in small amounts. It's like eating a multivitamin. <br><br>I then multiplied the nutritionals by 3, since 1 cup of dried mung beans makes 3 cups of cooked mung beans. I got insane nutritionals. <br><br>If I ate 3 cups of mung beans in one sitting, I'd be getting the following:<br><br>* 636 calories <br>* 4g of fat<br>* 45g of protein<br>* 186% of my daily fiber<br>* 150% of my daily folate<br>* 120% of my daily iron<br>* 120% of my daily magnesium<br>* 180% of my daily potassium<br>* 60% of my daily zinc<br><br>I looked at those numbers for about 5 minutes. I have to admit, it's one of the longest I've stared at a dollar. The dollar that was used to purchase 3 cups of what is essentially superfood. 1 cup is a serving size for me. 3 cups is 2 meals. <br><br>I have spent hours researching just how cheap and nutritious mung beans are. I have an 8 bag plan to lose a lot of weight. But I also plan to keep mung beans as part of my diet forever. <br><br>Mung beans are a superfood. Every meal is a dollar.
