Is there any career where I can be mediocre and not experience burnout?

I'm 28, currently I'm applying to law schools (I don't want to be a lawyer, I just want to do some random easily available part time job and enjoy having an academic degree from a good university for a couple more years). I'm not sure how long I have to endure until I hopefully get accepted to a college, and currently my job is killing me and I feel totally burnt out.

I've done 3 different office jobs with 3 different companies in 3 different locations in 3 different countries, and worked as a freelancer in a completely different field too.

I graduated with a totally meaningless degree. I'm 28 years old, don't have kids, I have a job, I have a degree, and I'm almost on the verge of a mental breakdown because of my current job, where I'm just a salaried employee who works like 8 hours every day in an office. I was a good student, I was a good freelancer, but salary based jobs are killing me, regardless of the actual job, the company or the country itself.

So I'd need something where I can work mediocre level, and it's not a high paying job, but it's a job that would allow me to have a work-life balance.
