Roasted vegetables to the rescue!

I've been doing meal prep for about 6 month. Each Sunday, I spend about 2-3 hours cooking and prepping the meals for the week. Each meal is a balance of p, c, and f.<br><br>This past week, I started experimenting with roasted vegetables as my side dishes and it has saved me so much time.<br><br>I buy a bag of peeled baby carrots, a bag of broccoli crowns, a bag of mini red potatoes, and a bag of sweet potatoes. I chop the potatoes into wedges. I toss the vegetables in some olive oil, salt, and pepper. I put the broccoli on a tray and cook for 20 min. I put the carrots, sweet potatoes, and potatoes on a tray and cook for 1 hour.<br><br>I use the roasted vegetables for the side dishes for each of the meals. It eliminates so much extra work in meal prep.<br><br>What are some other time saving tips you have found in meal prep?
