How do you get around the issue of mixed veggies?

A few months ago, I discovered that you can prep all your veggies and freeze them and then just use them throughout the week. <br><br>Especially when you're trying to cook lean, this is an issue. <br><br>For example, if you're trying to make a stir fry, but you're prepping, it doesn't make sense to freeze all the veggies (which is a bunch of mixed veggies like carrots, green beans, peas, corn, etc). It doesn't make sense to prep all the veggies because then you're starving yourself with some veggies that aren't really that healthy (as an example) and because it's not really good to overcook veggies like carrots. So then the question becomes how do you wash and bag all the veggies and then unfreeze them each time you need to use them? It seems to be a bit of a chore, especially when I'm trying to prep for the entire week. <br><br>If I try to keep all the raw veggies in the fridge, they may go bad after a week which defeats the purpose of meal prepping, and I have to end up throwing out a lot of veggies because they go bad. <br><br>I'm not sure what the solution is. Any suggestions?
