Mine is a soft-boiled egg, shredded carrot, shredded apple, peanut butter, and salt all mixed up and served over steamed rice. <br><br>My husband has commented that I've served him this meal before when I had no money. I've had to desperately text him at 4 PM on a Monday to come to my office with a box of Cheerios. <br><br>I remember when I started college and had to learn to cook a little. I remember getting Ground Beef. Canned Carrots. Frozen Potatoes. This dish was my first attempt at making a meal. I think I probably had shredded carrot in the fridge one day and shredded apple. It worked and it was filling. It was cheap. It was good. <br><br>I still enjoy it almost every week even though I'm a doctor now and own a house. I don't remember the last time I had Cheerios at work, but there is something to be said about how universally loved this dish is in my house. <br><br>I'm not going to give you a recipe for it, but I want to know what your favorite budget recipe is and am I the only person who cooks a peasant's meal and still enjoys it?
