My adaptation of a Jamie recipe. <br><br>3 medium carrots <br>3 medium celery stalks <br>2 cloves garlic <br>1 large onion <br>Diced. <br><br>1 teaspoon ground cumin <br>1 teaspoon ground corriander <br>1/2 teaspoon turmeric <br>1/2 teaspoon curry powder <br>1/4 teaspoon paprika <br>Salt and pepper. <br><br>1x can coconut milk. <br>400ml vegetable stock <br>1/2 pint water. <br><br>1x orange and lemon pepper seasoning cube. <br>1x dried thyme and rosemary seasoning cube. <br><br>Bunch of fresh coriander <br>Bunch of parsley <br>Chopped. <br><br>3 medium sized potatoes <br>Diced. <br><br>750ml jar passata. <br>400g red lentils. <br><br>Olive oil for browning. <br><br>Instructions: <br><br>Chop all vegetables and garlic. <br><br>Heat a little olive oil in a large pan. Brown the garlic, onion, carrots and celery. <br><br>Add the remaining 3 spices and seasoning cubes. Stir well and cook for one minute. <br><br>Add a little more olive oil and brown the potatoes. <br><br>Add the coconut milk, stock, water, passata and lentils. Stir well. <br><br>Add the chopped herbs and stir again. <br><br>Bring to a gentle simmer. Cook until the potato and carrots are tender. <br><br>Blend to smooth and serve. <br><br>Enjoy! X
