What are your "I never got around to buying that so I'll leave it out" ingredients?

Sometimes I see recipes that call for an ingredient that I would use in place of a staple. Things like shallots, leeks, or that fancy vinegar that's like apple cider but not quite. You *could* eat shallots or leeks, but you can just boil your vegetables instead, right? <br><br>What are the ingredients that you know you don't really need and deliberately leave out of recipes?
