Should I meal prep at home or buy meal prep and only spend time with my infant?

Woman and baby on the go here, and I need some advice! I did meal prep at home for 2 years, before I had my baby. Yes, it's healthy, it's way cheaper, and it's a great way to spend the weekend. I've started back into that again, and I've realized that it's just not for me.

When I only had to consider and spend time on myself, it was great. I'd meal prep all day Saturday, and it would last me until the next Saturday. Now, I have a baby that needs me, and I can only spend the weekend focusing on myself and myself only. I've realized that I just don't want to spend the weekend with myself, and I don't want to spend all my time with my baby in the kitchen, when I could be doing other things with her and watching her grow.

So, the question is, do I sell my Instant Pot and Le Creuset, and just buy healthy meal prep? I've done the math, and it will be expensive, but not as expensive than buying a gym membership every month. It would save me 4 hours on the weekend, which I could spend with my baby, and it would also help me if I'm going on a business trip, or on the go and don't have much time to eat during the day. I could also take the food on the go and eat it in the car, if I don't have time to sit down, and she's sleeping in the car. I'll also have more time to do errands, do my laundry, and make my baby's baby food, which is very important to me.

I'm not sure what to do, so if I've missed anything, please let me know! I can't be the only mom that has to meal prep on the go, but I'm willing to spend a little money on it if it means that I have more time to spend with my baby.

TLDR: Woman and baby on the go here. The issue is that the time I've spent on myself doing meal prep, could be spent on her. She will only be little for a short time, and I realized this weekend that I don't want to miss out on that to do meal prep. My goal is to be a working mom and a present parent.
