What's a great dish that favors "the poor"?

I'm a huge fan of chicken cacciatore because you can make it with cheap chicken breasts, onions, some wine, and a bunch of mushrooms. It's also really simple to make, and there are tons of different iterations to favors whatever color your kitchen leans towards.<br><br>I'd love some recommendations on similar dishes that are cheap, simple, and have a lot of room for customization.
