Why do Americans hate cookbooks?

I've recently found a passion for cooking. It's way cheaper and has been a huge money saver for me. I would go around bookstores and check out what cookbooks were there, and keep a mental note of them because I had a little budget to spend on them. When I had saved up enough money I would come back to the bookstore and buy the cookbooks I wanted.

I've been going to various big bookstore chains in the US to find cookbooks. Many bookstores don't have a section for cookbooks. Of the ones that do, many of the cookbooks aren't organized by type of food (Mexican, Italian, Asian, etc). I find it annoying that many bookstores don't specialize in cookbooks, and instead just have random cookbooks all over the place.

I'm Asian and back in my home country it's completely normal to see huge bookstores that specialize in cookbooks. Many of them are organized by types of food. I find it odd that the US isn't like this, especially given that cooking is a part of any nationality.
