I'm about to move from a house to an apartment in the next 30 days and I'm extremely concerned about getting everything packed up and moved. I'm also trying to save some money for the impending move and figured I'd make some chicken salad. I think I ended up with 7 pounds of chicken for about $7. I used 3 lbs boneless, skinless chicken breasts and 4 lbs of bone in, skin on chicken breasts. I also bought 4 carrots, 2 celery stalks, 2 apples, 2 onions, and 1 bag of walnuts. The total cost of the ingredients was about $20 or $2.86 per pound.<br><br>Process: I started by seasoning the chicken and baking it to 165 degrees. After letting the chicken cool, I added it to a food processor with 2 tbsp of duck sauce and shredded it into smaller pieces. I then cut up the carrots, celery, apples, and onions and added them to the food processor with 2 tbsp of mayonnaise and processed until everything was finely chopped.<br><br>Next, I stirred in 2 tbsp of mayonnaise, 1 tbsp of Dijon mustard, 1 tsp of Worcestershire sauce, 1 tsp of chopped fresh rosemary, salt, and pepper. I then transferred the chicken salad to 7 vacuum sealed containers and froze them. One of the containers has already been used and the chicken salad tastes amazing. I served it on a bed of greens with some crackers and pickles. <br><br>**TL;DR**: Made 7 pounds of chicken salad for $20 or $2.86 per pound. Chicken salad has apples, walnuts, and rosemary.
