Does anyone have tips on cooking for two people on a budget?

I have seen several recipes on this sub that I'd like to try, but they include ingredients I don't have and some of them make 4 servings and may freeze well and those are fine. But I'm not sure how to go about those recipes that make 8 servings. Everything seems to be geared for families or a big group. I want to know how to adapt those recipes to 2 and try to stay within a budget. It may be trial and error, but I thought I'd see what people here have to say. <br><br>My biggest problem is that I live in a very rural area and I don't have a lot of food options. I have one grocery store and it is not a chain store. The owners order their stock and they have what they have. Occasionally I have to make do, and some of my dishes don't turn out as well as I would like. Most of the time the dishes are fine, but sometimes I get a product that really isn't as good as I would have hoped. This store is also only open six days a week, and sometimes I'm in the position to be out of town on that day off. It is a small town and we don't have a choice. <br><br>I was thinking of trying to meal prep some, but I'm not sure how that works out when I'm cooking a dish that serves 8 and I want to reduce it to 2. I would also like to know how to store it. I have tried dividing the ingredients, but that doesn't always work. I also don't want to be eating chicken and rice for 3 days straight. <br><br>I'm not trying to be picky, but I'm not sure where else to go for advice.
