Why would you cut down a american white oak to make whiskey out of?

Why would you cut down a american white oak to make whiskey out of? Its a horrible idea to destroy this tree. The american white oak specifically is a protected tree. The whiskey is never good its always prejudiced as you and your fear of having to learn something new.
