New to meal prepping and need help.

I'm trying to eat healthier and lose weight. I work 50-60 hours a week as a nurse so I've had trouble finding time to eat healthy. I do shift work so I have days, nights, and weekends. Some shifts I have no problem bringing lunch and dinner, others I'm lucky to get bathroom breaks never mind a lunch break. I've been looking into meal prepping and I'm just overwhelmed. I've been looking up healthy recipes and reading tips but I need more advice from people who do it. <br><br>I have a few questions:<br><br>1. Favorites recipes you fix and freeze for later. I have some recipes I like but I'm looking for more healthy options. How do you reheat your frozen meals? Thaw them first, or throw it in the microwave?<br><br>2. How do you keep track of what meals you have in the fridge/freezer? A list on the fridge? I see some people use those little disposable containers so I guess you could put the date and meal on the container. How do you keep from forgetting about meals you have stashed in the freezer?<br><br>3. When you prep veggies like carrots, broccoli, bell peppers, how long will they last if you wash, chop, and store them in the fridge? Same with fresh berries. <br><br>4. How do you reheat meals you keep in the fridge like rice and chicken or casseroles? Once or twice a meal I can deal with microwaving but I don't want to eat that many microwaved meals. <br><br>5. Do you ever get tired of eating the same thing everyday? It's nice to have some variety everyday. Even if I prep 5 different meals, by the 3rd day I'm over the chicken and rice. <br><br>6. How many meals do you prep at once? I don't want to end up wasting food but I don't want to have to prep everyday either. I have a tiny fridge and freezer. <br><br>7. I've seen people prep breakfast burritos and omelets. When you reheat them do you end up with an egg that's like rubber? I've tried making omelets ahead of time and reheating them and they come out all rubbery.
