Why do people always say to automate or outsource anything repetitive and mundane?

I mean in a lot of cases, a human needs to carry out these tasks or the company will literally cease to exist due to no income for example:
- I'm a chef, if I get someone else to do my tasks then I would be out of a job and couldn't/wouldn't want to pay some random stranger to do my job
- I work in a hospital, I need to do my tasks to keep the environment clean and the patients safe
- I work in social media management, if I automate every little thing I would just get fired and lose my income source
- I work in a grocery store, I have to do my tasks to ensure people can buy food and other necessities
- I work in a school, if I automate/outsource some tasks I could just lose my job

This list goes on and on. If I'm doing something repetitive all my life, automate or outsourcing all of it wouldn't make sense and if I scaled it all with my business, all these repetitive tasks would literally be the work that the employees have to do and if I were to automate all of it, I would lose my employees' jobs and probably lose trust from my customers if not worse.
