Meal prep on a budget

So I’ve been trying to meal prep for a few weeks now but the food I’m preparing is expensive. I’m also doing meal prep for my 2 kids and I’m a single parent with a budget of 60 dollars for all 3 meals for 5 work days, as I’m allowed to bring home the leftovers for the weekend and still get groceries. <br><br>I’m also doing keto, so that makes it a bit more expensive, the meat is pretty expensive but I can’t find anything cheaper that is still keto friendly that can last longer. <br><br>I make chicken fajitas, chicken breast, chicken thighs, ground beef with cabbage and carrots, the occasional chicken stirfry, but I can’t seem to stay within my budget no matter what. <br><br>Is there anything that you guys could recommend that stays within a keto diet that I could make that won’t break the bank? <br><br>I’ve tried chicken drumsticks but my kids were not a fan. They love chicken breasts, fajitas, ground beef, chicken thighs. I just need something that is also budget friendly that I can make for them.
