I accidentally made some really good pickled onions

I bought a kinda shady jar of pickled onions from the store. It was some off brand thing for $1.30 for a pint jar. I got it home and the onions were like 2/3's of the jar. They were just packed to the brim with onions and not enough liquid to cover all of them. I scooped the onions out into a new pint jar and then added the liquid into the new jar also. I added enough apple cider vinegar to get it to brine the onions. <br><br>I have to say that this may be one of the best pickled onions I have ever made. So that is what I have been doing since. Making pickled onions with a pint jar all the time. I usually use a half gallon size jar to make pickled onions but now I have switched to a pint jar for this size batch.
