Roasted Vegetable Quinoa bowls

Hello fellow meal preppers, <br><br>I recently went vegan and started meal prepping. I thought I share a great meal prep recipe with you all. It's super easy and delicious. <br><br>What you need<br>================<br><br>* 1 cup of quinoa <br>* 1 table spoon of olive oil<br>* 1 onion chopped<br>* 2 cloves of garlic <br>* 1 cup of broccoli <br>* 1 cup of carrots chopped<br>* 1 cup of bell peppers<br>* 2 cups of water<br>* 1 cup of mushrooms sliced<br>* Salt and pepper to taste<br>* 1 cup of chickpeas <br>* 1 avocado sliced<br>* Paprika for topping<br><br>Instructions<br>=============<br><br># first sauté the onion and garlic for 2-3 minutes<br>1. add the mushrooms, chickpeas and sauté for 5 minutes<br>2. add broccoli , carrots and bell peppers and sauté for 5 minutes<br>3. add water to the pan and bring it to a boil <br>4. add quinoa to the pot and simmer it for 20 minutes until all the water is absorbed and the quinoa is cooked<br>5. season with salt and pepper to taste<br>6. serve it in a bowl with sliced avocado on top<br><br>Note: this is a very basic recipe, you can add any vegetables of your preference and spices to make this recipe delicious <br><br>You can add how you prefer the vegetables to be, whether you like them soft or crunchier. Also you can roast them in a oven as well instead of pan.
