I hate the term meal prep, but I like to cook a lot at once. This is my favorite meal I've done so far, and I thought I would share. <br><br>I like to keep it very simple, because sometimes I'll prep 8 tupperware containers and you know how that sometimes goes: good for the first 3 days, maybe ok for 4-5. But this one never gets old.<br><br>Oddly, it doesn't have a name. And I'm not going to bother trying to title it "Quinoa Chicken Cheese Chicken Broccoli Soup With Garlic Bread". But that's what it is, so here are the ingredients:<br><br>* 3 lbs chicken breasts, sliced<br>* 6 cups of chicken broth<br>* 6 cups of water<br>* 4 cups of broccoli florets<br>* 2 cups of diced carrots<br>* 1 cup of diced onion<br>* 2 cups of diced tomatoes (3 if you like)<br>* 3 cloves of garlic, minced then sautéed<br>* 2 cups of cubed cheddar (or any, really)<br>* 1 tsp of dried basil<br>* 1 tsp of dried oregano<br>* Salt and pepper to taste, of course<br>* 2 cups of quinoa<br>* 2 tbsp of olive oil<br>* 3 cups of shredded mozzarella (because I like a little extra cheese)<br>* 1 loaf of Italian bread<br><br>The quinoa is prepared according to its instructions (2 cups of water, salt, then boil and simmer for 15 minutes). I always like to let it cool before I add it to anything. <br><br>The veggies, basil, oregano, salt, and pepper are sautéed together in the olive oil for about 10 minutes, then I add the chicken breat slices in to cook. Then I add the water and broth, bring it to a boil, then cover it and let it simmer for about 15-20 minutes. During this time, I'm cubing the cheese for the soup. Once it's finished simmering, I add them in and stir it around until it's all combined.<br><br>Now I have my soup. <br><br>I then cube the bread, spread the minced garlic on each slice, then cover it in shredded mozzarella and broil for 5 minutes. Or until the cheese is melted. <br><br>Then I have my meal. <br><br>I add a slice of the garlic bread on top of each meal (so you can eat them together) and it's an amazing little meal. <br><br>Sometimes I'll add more cheese on top just to keep things interesting, but it's so good. It's just a little something I thought I would share, and I'm sure I'll make it again in the future. <br><br>​
