I'm saving $1,000/month, how do I afford food?

I'm living on a student loan, which is only enough to cover my tuition. I have to buy food. Usually I try to cook extremely simple food, like rice and a can of beans or lentils. We are also vegan and live in an extremely rural area. I also tend to eat a lot of energy bars and olives and nuts to supplement. How do I eat more variety with minimal ingredients? We have no refrigerator, only a cooler and ice packs, so we can't buy perishable products.<br><br>We have a rice cooker, slow cooker, and instant pot. I have no idea how to use the slow cooker or instant pot, and I don't have any cookbooks or instructions. I just know how to make oatmeal in the rice cooker!<br><br>Any suggestions are welcome.
