To our core members, I apologize for this. I am not dating, just curious for the future. I am dating a new person. I’m a college student so I don’t have a lot of money. The person I’m dating said they don’t eat meat so I should make it vegan. I’m not vegan and so I’m having trouble coming up with ideas. The person I’m dating is a girl and the date will just be 1-2 people. Here are the ingredients I have, for reference:

Carrots
Corn
Beans
Rice
Tortillas
Cereal
Evaporated milk
Onions
Shrimp
Tomato paste
Pineapple
Bread
Hot sauce
Tortilla chips
Peanut butter
Marinara sauce
Fruit
Alfredo sauce
Peanut butter sauce
Mushrooms
Garlic
Potatoes

I am homesteading so I will be able to get any of the ingredients in the pantry for free. I do not have a budget to buy ingredients. I will likely be cooking on a portable stove, but I can also use an air fryer for any dishes. Please keep the cooking time as short as possible. This will be in a tent.

tl;dr: Please recommend a vegan dish from the ingredients I have.
