What's a good paying job in a field that isn't a rollercoaster ride of demand?

I'm trying to find a job field where I can be a professional and not constantly have to worry that my career is about to go belly up because it's not in demand anymore.

Example of a field that would be a rollercoaster ride is web development in particular. It's in demand these days, but it wasn't approved 10 years. And it seems to be a field that basically changes on a daily basis, so you have to be constantly learning a new API, framework, tool, or technology to be proficient. I would rather not have to basically be constantly in school for a job, I just want to do my job to the best of my ability.

I have been eyeing engineering, but it seems that that's a field where you sit in front of a computer a lot. It also appears to be like web development in that it requires a lot of training and staying up to date with the latest technologies and tools in order to be good at it.
