I have experimented with meal prep for a while and I want to share with you all a meal prep recipe to make rice and bean burritos for 1.60 a meal.<br><br>****The Cost:****<br><br>* 20 burritos for $32<br><br>****The Macro Breakdown:****<br><br>* 450 calories per burrito<br>* 55g carbs<br>* 20g protein<br>* 12g fat<br>* 7g fiber<br><br>****The Recipe:****<br><br>Ingredients:<br><br>* 12 cups water<br>* 3 cups uncooked white rice<br>* 1 can diced tomatoes with green chilies drained<br>* 3 cups mixed frozen bell peppers<br>* 2 cups mixed frozen corn and peas<br>* 1 teaspoon cumin<br>* 1 teaspoon chili powder<br>* 1/2 teaspoon salt<br>* 1/4 teaspoon black pepper<br>* 2 tablespoon olive oil<br>* 3 cups mixed frozen black beans and corn<br>* 3 cups shredded cheese<br>* 20 10 inch flour tortillas<br><br>****Instructions:****<br><br>1. Combine the water rice diced tomatoes bell peppers corn and spices in a large pot and bring to a boil.<br>2. Once boiling reduce heat to low cover and let simmer.<br>3. Once the rice is cooked stir in the olive oil and black beans and let cool.<br>4. Lay out all of the burrito wrappers and spoon about 1 cup of the rice and bean mixture onto half of each burrito.<br>5. Sprinkle a quarter cup of cheese on each burrito.<br>6. Fold burritos in half and serve.<br><br><br>****Pros and Cons:****<br><br>Pros:<br><br>* Cheap to make<br>* Easy to make<br>* 450 calories and 20g of protein per burrito<br><br>Cons:<br><br>* Not the most diverse ingredients<br>* Some may not like the idea of beans for protein<br><br>****Thoughts:****<br><br>These burritos are an easy and cheap meal prep. It only takes about 40 minutes to make 20 burritos. The meal prep is perfect for a college student who is cooking for themselves as you can make a large batch of burritos in less than an hour and they can be stored in the fridge for up to a week. <br><br><br>****TLDR:**** Cheap rice and bean burritos that are 450 calories and 20g of protein for 1.60 a meal.<br><br>****Update:**** Thank you all for the awards.
