What's the best way to write character moments?

I have been trying to write a character piece for one of my characters, and I am really struggling with it. I have a good idea of the characters backstory, personality, voice, and motivations, and I got lucky and some really emotional moments from this character came to me and I was able to write them out as scenes, but the rest of the scenes are just really dry. The entire story is told in the first person from the perspective of the character I am writing from the POV of.

I know that I have to show, not tell, but when I try to write the character out, I keep on writing them as if I am the writer, not the character. I'm not sure how to best describe what I mean by that, but I assume you get the idea.

In moments where the character is just talking to someone else, they are very dry and I get the sense that they are just this blank slate with no character. I know that I am the one writing these scenes, but at the same time I want to bring the characters moments to life, you know? My writing has gotten better, but I have been learning a lot of writing tactics and storytelling techniques and I want to be able to bring this character's voice to life in some way.
