You can make a delicious soup with just beans and rice...but bring it to the next level with some onions and garlic. <br><br>Saute 2 onions and a head of garlic in a little bit of oil in a big pot. Then add in a couple of pounds of dried navy beans that you've soaked overnight. Pour in enough water to cover the beans plus about six inches, then bring to a boil, then reduce heat to a simmer. Simmer/boil for about an hour, or until beans are pretty soft. <br><br>Then add in a couple of pounds of uncooked white rice. If you have broth or stock lying around, add it in, along with enough water to cover the rice plus about six inches. Bring to a boil, then reduce heat to a simmer for at least another hour. <br><br>Serve in a big bowl hot. <br><br>This will make at least 6 servings, probably 8. Make some cornbread or a salad to round out the meal. <br><br>Total cost is probably $3.50 tops. <br><br>Enjoy!<br><br>EDIT: This recipe seems to be very popular, and I appreciate all the awards. If you're using broth, make sure it's not chicken or beef broth, and you're good to go. <br>3. If you're using stock, make sure it's not made from animal products, or use something like Worcestershire sauce to give it a little kick. <br>4. Experiment with different spices. Try basil, oregano, thyme, cumin or paprika to give it a little different flavor. <br>5. If you've got tomatoes lying around, whether fresh or canned, toss 'em in. <br><br>Remember, the beauty of this recipe is that it can be made with just beans and rice, and a little bit of water.
