What are some things that you can do with audio from real people?

I have been wanting to make flashcards for a while, but before I do I want to do a few other things with the audio first. I have audio from real conversations that I have had recently, but I feel like with audio from real people you can do way more with it than you can with video. As far as I know this is what you can make with audio from videos, flashcards, and what else?
