My wife had always hated cooking, so when she finally tried her hand at making homemade egg noodles from scratch at 25, she never strayed from that dish. It became her go to. I can never tell her, but her noodles are like little pieces of heaven. Whenever she made it, I’m not kidding, our guests would fight over it. They’d even turn down seconds of the main course just for seconds of her noodles. To say they were a hit was an understatement, but for some reason, no one could replicate them. She made it so much that when I met her parents, they were like, “Oh boy, egg noodles again.” I was 25, and I asked her to marry me when I was 30. <br><br>The day before she died, I was working late. She called to see if I’d be home in time to eat dinner with her and our daughter. I told her I was running late, but I’d be home in time to help clean up and that we could watch a movie together if she wanted. I was stupid. I could have left early. I could have come home, had a partial plate of noodles, helped clean up, and gotten our daughter to bed early. But I didn’t. When I got home, she was already asleep with our daughter. I didn’t even get to say good night or give her a kiss on the forehead. <br><br>I pretended I was her the next day when the Sherriff came to my door. “I’m not sure what you’re talking about officer,” I said. “My wife is right here.” I called ambulance after ambulance and even done CPR until they came. She was gone. I held her until they came and took her away. Our daughter keeps asking for mommy. She doesn’t understand. <br><br>I never got to truly learn how to make Wife’s noodles. But I remembered that she used 2 cups of flour, 1/4 teaspoon salt, 1/4 teaspoon baking powder, a tablespoon of butter, and an egg. Before, I tried using two eggs thinking that it would be more moist, but it wasn’t the same. Yesterday, I cracked a single egg and kneaded for nearly 20 minutes until I got it down to a fine flour. Then I rolled it, cut it, and simmered it in low sodium chicken stock with 2 tablespoons of butter until it was done. Upon the first bite, it tasted like her noodles. <br><br>Chambers, I finally learned how to make Wife’s noodles! Our daughter will grow up knowing what mommy’s noodles taste like. And when she’s ready to learn, I will teach her.
