For those of you that don't know, the Indian railways is one of the largest and busiest in the world, ferrying over 8 billion passengers and a billion tons of cargo every year. But we still manage to serve the best food in the world. Even foreigners agree!<br><br>Do you know why? It's because our food is so varied. There are so many options. You get to try so many different types of cuisines. I'll explain.<br><br>You board a train, you're happy. You're finally taking a break from all the hard work you've been doing. You walk along the corridor, and experience the sights and sounds around you.<br><br>You look around, and you see so many people of all ages, castes, and creeds. You see a 5 year old kid excitedly waving at you. You see an old grandma, hugging your waist and asking where you're from. You see a South Indian mom feeding her picky eater kid idlis. You see hundreds of different people of different cultures and ages.<br><br>And the sights. Oh god, the sights! You see the sun setting and the sky turning pink. You see a small station go by. You see a train go by with people waving at you.<br><br>And the smells! Oh god, the smells! You smell the hot idlis, fresh dosas, steaming cup of chai, fried and crispy fritters, and the sweet and spicy smell of jalebis deep fried in ghee.<br><br>You get hungry, and you go to the dining area. You experience different cuisines. You try the spicy and sour rasam from Kerala. You try the spicy biryani from Andhra Pradesh. You try the piping hot vada pav from Mumbai. You try the flaky and buttery parathas from the North.<br><br>And let's not forget the street food. The chaat. The kebabs. The fried eggs. The samosas and kachoris. The piping hot momos. The flaky and spicy pani puris.<br><br>And the people. Oh the people. You meet new and interesting people who are passionate about food. You learn about their cultures and traditions. You learn about their love for food. You learn about their love for life.<br><br>And that's what makes Indian railways the best in the world. It's not just the food. It's the experience. It's the experience of exploring a whole new world. A world of cuisine, culture, and love.<br><br>So, the next time you're on a train, make sure you don't miss out on the experience.
