I don't think we're in a simulation

I mean, we could be. But I don't think it's necessary to invoke a "simulated reality" to explain the world we live in. In fact, I think it's kind of like the Gaia hypothesis again: what if Earth and/or the laws of physics are the simulation, and we're just playing the game?
