How do you feel about light hearted and "fluffy" anime that don't have a serious or deep plot?

As a guy who primarily watches anime with deep plots and psychologically complex characters (e.g. Akira, Psycho-Pass, Tokyo Ghoul, Paranoia Agent, Death Note, etc.) I can't help but feel that a lot of anime that are just light-hearted and fluffy are extremely shallow and lack any real substance. I feel that anime with deep plots and psychologically complex characters tend to make you feel a wide variety of emotions, deep emotions that stick with you even after you finish the series, deep emotional connections with characters, and allow you to reflect on some really deep psychological and philosophical questions that are associated with the human condition, that's what I personally find so appealing about watching anime in the first place. I would never bash anyone for watching "fluffy" anime but I don't understand the appeal.
